Abstract
In the present investigation the proteins of shark and skate and casein
have been subjected to the action of two proteolytic enzymes and studied
from three different angles, viz., (i) determination of the total digestible
nitrogen when hydrolysed by pepsin, («) comparison of the rate of hydrolysis
of the proteins under the influence of trypsin, and (Hi) order of liberation
of the amino acids during tryptic digestion.
