Abstract
The paper chromatographic analysis (Part 1) and the enzymic hydrolysis (Part 11) of the proteins prepared from the muscle of shark and skate indicated that these proteins compare very favourably with casein. The essential amino-acid content (Rose, 1938) of proteins has received considerable attention of the nutrition chemists (Block and Boiling, 1952). In fact, Mitchell and Block (1946) have arrived at the biological values of various proteins by comparing the essential amino-acid concentrations with those of the whole egg protein.Downloads
