Abstract

Biochemical, nutritional and microbiological quality of ice stored Notopterus
chitala brought from other states and sold in the Imphal market, Manipur
was studied over a three month period (Dec, 1994 to Feb., 1995). The
percentage of total protein, lipid and ash values were 82.08, 6.51 and 4.01 on
dry weight basis. Moisture content was 78.80 %. Non protein nitrogen (NPN),
total volatile base nitrogen (TVBN), free fatty acid (FFA), thiobarbituric acid
(TEA) number and pH values were 2.14 %, 14.00 mg %, 6.35 % as oleic acid,
0.62 mg malonaldehyde/1000 g and 6.40 respectively. Digestibility, biological
value (BV) and protein efficiency ratio (PER) of casein and A^. chitala were
86.62 vs. 84.31 %, 92.82 vs. 91.55 % and 2.44 vs. 2.46 respectively. There was
no significant difference in PER, BV and digestibility values (p>0.05) between
casein and A^. chitala diets. The total plate count of bacteria (TPC g V cm'^ of
skin) was between IC-IO', the highest being in gill and skin and the lowest
in muscle. Coliform, Staphylococcus aureus, faecal Streptococci were detected
while E. coli and Salmonella were not detected. Eight genera of bacteria and
four of fungi were identified.
