CANNING OF TUNA IN OIL

Abstract
This paper provides the experimental details of canning of tuna
in oil. The species utilized in the experiments were the skipjack
(Katsuwonus pelamis), yellowfin tuna (Neothunnus macropterus)
and bigeye tuna Parathunnus obesus mebachi) ranging in weight
from 2.5-82 kg. The method worked out is applicable to an species
