Abstract

Twenty rice genotypes with significant differences in protein and amino acid profiling were used in the experiments. During different storage intervals, the rice genotypes had difference in protein content at the time when the synthesis of methionine content and Lysine content reached a maximum, but had difference at the time of storage when the total phenol content reached a maximum, the aroma quality genotypes were high due to high amino acids content
