Abstract

Contamination of milk ocurrs during and after milking affecting its quality. Various factors like off flavour and odour, microbial content, contaminants, somatic cells in milk, antibiotic and drug residues, etc. influence the quality of milk to a great extent. Therefore, precautions need to be taken for clean milk production. These pertain to hygiene and cleaniness of milkers and milking procedures, keeping animals healthy and disease-free, keeping animal houses clean, cleaning of milking equipment and utensils etc. Producing quality milk will give rise to better health and well-being of people and dairy animals as well.
