Abstract

The high value species are mostly processed for export, most of the medium and low value species, which form the bulk of the landings, are marketed fresh or are processed for the domestic market. Post harvest loss of resources is an area of major concern in this sector and one of the solutions for that is production of value added products, which also can contributed to the improvement of the economic status of the people engaged in this sector. The increasing affluence and the consequent changes reflecting in the eating habits particularly in the west has resulted in the demand for diversely processed value added convenience fish based products. Technology for the production of a large number of ready to cook or ready to serve value added and diversified products based on different varieties of fish and shellfish, wild as well as farmed, both for export and domestic markets are readily available.
