Abstract

In the Pampore region of Kashmir valley, post harvest handling of saffron, particularly the drying process is critical to maintain the quality of saffron. Drying brings about the physical, biochemical and chemical changes necessary to achieve the desired quality in saffron and its preservation. The NAIP Post Harvest System has helped to establish a Saffron Park with hi-tech facilities for saffron processing,handling, drying quality testing and packing.
