Abstract

Current work was aimed to determine the monosaccharide composition and relative molecular weight of the biopolymer produced by fermented food isolates of W. cibaria using high-performance anion-exchange chromatography pulse amperometric detection (HPAEC) system and size exclusion chromatography (SEC), respectively. Both W. cibaria isolates found to produce homopolysaccharide of glucose and having a molecular mass higher than 220 000 Da.
