The present investigation was carried out to optimize the process parameters for the mechanized formation of khoa peda. The mechanized peda forming system was designed on the basis on piston pressing technology. Experimental setup consisted of piston, cylinder, die, and knife cutter arrangement for pressing of khoa peda mass into small disc shape. Three factors viz temperature (26 Â to 34 oC), pressure (0.276 to 0.818 kg/cm2) and die geometry ratio (1 to 2) were selected for study. Results were analyzed and multi factor optimization was carried out using the Design Expert software (Ver. 8.0). Product properties of market samples were taken as target values for optimization. Optimized factors for the mechanized formation of peda were 34oC temperature of peda mass, 0.818 kg/cm2 pressure and 1.913 die geometry ratio. The predict values of responses for optimized parameters were Hardness: 27.906 N, Adhesiveness: -0.315 N, Springiness: 0.089 mm, Gumminess: 3.005 N-mm, Chewiness: 0.302 N-mm, Thickness: 1.89 cm.
