Abstract

   An experiment was conducted to develop folate enriched yoghurt by employing Lactic Acid Bacteria. Fourteen different lactic acid bacterial cultures were selected and screened for their folic acid production potential by microbial assay method. Among them, two  cultures with maximum folate production (L. acidophilus NCDC 291 and B. bifidum NCDC 229) were selected and incorporated along with commercial yoghurt culture for the preparation of folate enriched yoghurt samples. The yoghurt prepared by using commercial yoghurt culture (NCDC 264) was used as the control. The developed folate enriched yoghurt samples and control were analyzed for chemical and sensory qualities by standard procedures. Incorporation of folate producing bacteria in yoghurt had not altered the chemical qualities.  There was a significant increase in folic acid content in treatment samples of yoghurt when compared to control. Sensory qualities of the folate enriched yoghurt samples were better than the control.
