Economic analysis of consumption pattern of dairy products in Kolkata city

The milk production, supply and marketing in Kolkata is decentralized. Almost 55 percent of the milk produced is consumed by the producer household. In the last ten years Kolkata has gone through a lot of changes, which has also been reflected in the people’s diet, product preferences and quality. It was observed that 18 per cent households were found in low expenditure group. The lower middle and upper middle expenditure groups constituted 32 and 31 per cent, respectively. The high expenditure groups constituted 19 per cent of total households. More than 90 per cent of total sample households consumed milk both as liquid and powder form. The household’s consuming ghee, paneer and butter were found to be 61.50 per cent, 28.5 per cent and 31 per cent of total households, respectively. The per capita monthly expenditure on milk and milk products in different occupational groups revealed that the average per capita monthly expenditure on milk and milk products was found to be maximum in non-salaried group (` 497.28) followed by salaried group (` 409.51). The overall average per capita monthly expenditure on milk and milk products was found to be ` 433.33. It also found that the consumer of Kolkata purchased milk and milk products mostly from super market (58 per cent) followed by dairy cooperatives and local market.
